Here’s a salad recipe worth getting excited about! 🎉 Curry-powder and maple-syrup topped nuts bring the crunch to a delicious combo of grilled nectarine and haloumi, fresh greens and in-season blueberries. It's a brilliant side for a summer dinner (just add grilled chicken or steak!) or a packed lunch for work. Shop the ingredients at Woolworths at Terrace Central⠀

🥗 What you need:⠀
1/2 cup unsalted mixed nuts⠀
2 tsp pure maple syrup⠀
1/2 tsp curry powder⠀
120g baby rocket⠀
170g blueberries⠀
2 tsp red wine vinegar⠀
2 1/2 tbs extra virgin olive oil⠀
2 nectarines, cut into wedges⠀
180g haloumi, sliced⠀

🍴 How-to:⠀
Roast: Nuts + syrup + curry powder (5 mins at 200°C).⠀
Prep: Toss rocket, blueberries, oil, and vinegar.⠀
Grill: Char nectarine slices and haloumi.⠀
Assemble: Layer everything together and top with the spicy nuts.
